La Maison du Gruyère is a working cheese dairy and museum in Pringy, a short walk below the medieval town of Gruyères and next to the train station. From an upper viewing area you look down on copper vats where cheesemakers turn fresh milk into Gruyère AOP. The audio guide, narrated by a cow, explains each step, and the visit ends with a tasting of cheese at different ages. The shop sells cheese, fondue sets, chocolate and souvenirs, and the restaurant serves fondue and Swiss dishes.

Watching the cheesemaking

The viewing area is on the upper floor. From there you look down through glass onto the workers and the copper vats below, where the curd is cut and shaped into large round wheels. The equipment is fully modernised, so the process you see is the current one, not a reconstruction.

During a demonstration, a master cheesemaker produces 48 wheels of Gruyère AOP while visitors watch. Demonstrations run several times a day, but the timing shifts with the season. Ask at the desk or check the website for today's schedule before you walk up.

The audio guide is narrated by a cow and comes with the entry ticket. It explains the stages of production, the milk, the salting and the ageing, and the exhibits give background on the history of the cheese. Headsets are available in many languages.

The cellar and the salt brine

Before you enter the museum, you can look into the maturing cellars. Wheels rest on wooden shelves while a machine turns them and washes the salted rind. The cellar can hold up to 7,000 wheels, and this part of the visit is free.

The cellar view is the quickest way to understand why the wheels need months of care. Gruyère gets its flavour from time, so the older wheels in the shop taste very different from the young ones.

Tasting and the shop

The tour ends with cheese samples of different ages. Visitors who like strong flavours often pick the oldest one, which has been aged for two years or more. The shop sells Gruyère at several ages, along with fondue sets that contain what you need to make fondue at home, chocolate, biscuits and souvenirs.

The restaurant on site offers a day menu with Swiss dishes, including a three-course option that finishes with meringue. The caramel sundae is a popular dessert. Fondue is also on the menu, including the moitié-moitié version, which mixes two cheeses.

Getting there and nearby sights

The factory is at Place de la Gare 3 in Pringy, next to the railway station. To reach it by train, take the train to Bulle, then the small train to Gruyères-Gare/Pringy. The entrance and the parking lot are wheelchair accessible.

On the same day, you can climb to Gruyères Castle, which is a walk up from the factory. The Maison Cailler chocolate factory in Broc is also close by. The regional DayPass La Gruyère includes entry to the cheese factory, along with other sights and public transport in zones 30 and 31.
